I’ve got a whole slew of fun holiday content to share over the next couple of weeks and I really hope you’ll enjoy the recipes I’ll be posting. This year I’ve tried to keep things simple: simple ingredients, simple instructions, simple recipes. Every year I’m reminded with how hectic the holidays are that simple is best. Less is more.

And that is certainly the case with these roasted ranch potatoes and bacon. This recipe keeps the ingredient list small and the hands-on time even smaller. The potatoes take no more than 10 minutes to prepare which is perfect if you have other dishes or desserts to make.

To keep this recipe simple while still packing a punch of flavor, we’re using Hidden Valley® Ranch Seasoning. This allows us to keep the ingredient list small and still get lots of complex flavors. Yum!

Since we aren’t adding a full package of ranch seasoning, I like to use the Hidden Valley® Original Ranch Seasoning & Salad Dressing Mix shaker as it makes it easy to add delicious ranch flavor to any dish with a shake (or two!). Measure out two tablespoons for this recipe, then store the rest for future use (as opposed to throwing out the rest of an un-used seasoning packet).

  • 3 pounds baby dutch potatoes and/or baby red potatoes (I like a mix of both best)
  • 3 tablespoons olive oil
  • 2 tablespoons Hidden Valley® Ranch Seasoning Mix
  • 1 tablespoon unsalted butter, melted
  • 6 slices center-cut bacon
  • Fresh chives or green onions, optional
  • Sharp cheddar cheese, freshly shredded, optional


  1. Preheat the oven to 400 degrees F.

  2. Thoroughly wash and scrub the potatoes and then dry. Halve the potatoes (quarter especially large potatoes) so all pieces are roughly the same size. 

  3. Pour the potatoes onto a very large sheet pan and add in the olive oil, ranch seasoning mix, and melted butter.

  4. Thoroughly mix the potatoes with this mixture until the seasoning mix is completely “absorbed” into the potatoes (you no longer see any white from the seasoning). Once the potatoes are well mixed, spread them into one even layer avoiding any overlap. If the potatoes are overlapping they will steam instead of getting a nice roast.

  5. Place in the oven for 15 minutes. Meanwhile, cook and crumble the bacon.

  6. Remove the potatoes and flip around. Cook for another 15-20 minutes or until fork tender.

  7. Remove and toss with the bacon bits and if desired freshly chopped chives or green onions. Taste and add any additional salt or pepper if needed (I think the seasoning mix usually covers the bases pretty well!) We also like adding a small handful of grated cheese on top of the hot potatoes (mix it in to get a bit melty) — totally optional, but delicious!
